Abstract

Chemical properties of vegetable oils are discussed and FTIR spectrophotometry with ATR is presented as a technique for the characterization of rapeseed oil. The given data describe qualitative and quantitative changes in the chemical composition of rapeseed oil and oxidized rapeseed oil (oxidation conditions: 125-170 deg. C, O2 flow rate 135 l.h-1).
